Easy Recipes

Christmas Punch

  • 5 cups 100% cranberry juice* 40 ounces, NOT cranberry juice cocktail

  • 2 cups apple cider

  • 1 1/2 cups ginger ale (12 ounces)

  • 2 oranges thinly sliced into rounds

  • 1 cup fresh cranberries

Optional:

  • 2 bottles very dry sparkling wine (750 ml bottles), such as champagne, cava, or Prosecco

  • 1 1/2 cups dark rum or brandy (12 ounces)

  • Make sure all your ingredients are chilled, you can add a bag of ice to a punch bowl, but keeping your ice separate will make it last longer.


3 Ingredient Stuffed Mushrooms

  • 1 pound white button mushrooms

  • 1 10-ounce or 10 ounces of any sausage

  • sprigs of Italian Parsley for garnish, optional

How To:

  • Clean mushrooms. Pat dry and gently pull off stems. 

  • Cut rough ends off of the stems & then chop the rest of the stems finely. With a small spoon, gently scoop out centers of mushrooms.

  • In a medium bowl, mix chopped stems and mushroom meat from the centers with the sausage. 

  • Fill mushrooms with a spoonful of sausage mixture. It's okay to mound up the sausage slightly since it will tend to shrink down when cooked.

  • Arrange on a baking dish with 3tbls water in the bottom of the dish.

  • Bake, uncovered, at 350 degrees for 45 minutes.

  • Top each mushroom with a tiny sprig of Italian parsley (if using) and serve immediately.

3 Ingredient Short Bread Cookies

  • 1 cup butter, room temperature

  • 1/2 cup powdered sugar, sifted

  • 2 cups all-purpose flour

How to:

Preheat your oven to 350o F (180oC) and line a baking tray with parchment paper.

  • In a large bowl mix together soft butter and sugar with an electric mixer until light and fluffy.

  • Add in the flour and mix until the dough just comes together.

  • Turn the dough out onto a counter dusted with powdered sugar and gently roll the dough into a long two by two inch log.

  • Wrap the log of cookie dough in plastic wrap and allow it to firm up in the fridge for 30 minutes.

  • Once the dough is firm slice the cookies into 3/4 inch thick rounds. Place each round on your baking tray and bake for 16-18 minutes or until just golden.

  • Allow to cool slightly before transferring to a cooling rack.

  • Once cool the cookies can be stored in an air-tight container for up to 3 days.
